In the 1990's, the "fagiolina"
of Trasimeno Lake risked to disappear. The risk has been avoided only
thanks to the growing synergy between some farmers, the University of
Perouse and the Provincial Authority of Perugia.
Today, only 4 or 5 farmers are
growing "fagiolina"; all the others have been discouraged by
the laboriousness and long time needed for its growing and the manual
sowing and threshing.
Sowing take place in springtime, the
ripening is graded and the long manual arvesting begins in June
ending at the beginning of October.
Then, the pods are sun-dried and
threshed with hay-forks and sticks; afterwards, seeds are winnowed and
finally the fagiolina is put into hempen cloth bags
