Maize Flour for Polenta

Why maize? Maize (corn) is a very ancient cereal. By grinding the kernels, you obtain flour for polenta. Melagrani produces this flour in two varieties: yellow and white. We grow and harvest maize flour as in the ‘good old days’. We harvest maize ears by hand: then, we husk and plait them so that they dry slowly in the open air before we shell and grind them.
